
Whole wheat batter bread
By popular demand... my whole wheat batter bread recipe!
6 cups ww flour
2 tsp salt
2 tbsp active dry yeast
3 tbsp oil or melted butter
4 tbsp honey (the runny kind)
2 eggs
2 c very warm water
Mix the flour and salt. In a separate dish, mix the yeast, honey, and water -- let this sit until the yeast fizzes. Add the oil and eggs to the dry ingredients, then the yeast mixture, and beat well. It should make a really soft, wet dough. I use my food processor for this.
Beat for a bit, then let rise for about 45 minutes in a warm spot. Stir it up good again, then divide it into two greased bread pans. Let rise a second time until doubled, then bake in a 350 oven for 30 minutes or until it tests done.
It's a pretty dense bread, but it's sweet and tasty, perfect to go with soup or stew, and it toasts up lovely the next morning!
